Zeke's Delicious and Easy Fried Potatoes

These simple fried potatoes require only a little bit of oil and some light seasonings. They’re so easy yet so delicious. Even the picky kids in your house will like them! They're a healthy and fast side dish with breakfast, lunch, or dinner.

Ingredients

  • 1.25 pounds yellow potatoes (about 4 medium-sized) -- red or russet potatoes will work, too
  • 1 medium onion, coarsely diced
  • 1 teaspoon premixed “seasoned salt” (We used Lawry’s, but any similar mixture will do)
  • 1 tablespoon oil, avocado or olive
  • Salt and pepper, to taste

Preparation

  1. Dice potatoes into a 1/2-inch cubes
  2. In a large skillet, heat oil over medium heat
  3. Add potatoes and onion with a dash of salt, toss to coat with oil. Sprinkle half of the seasoned salt. Allow to cook for about 5-7 minutes. You want a little color to start to develop on the potatoes and onions.
  4. Mix potatoes and onions well and sprinkle remaining seasoned salt. Allow to cook for another 5 minutes or so. Again, you want a little color on potatoes.
  5. Once color has developed, check potatoes doneness with a fork. If tender, add salt and pepper to taste and serve. If potatoes are still somewhat firm, add about a tablespoon of water to the skillet and mix potatoes. This will help steam potatoes without them burning. Wait a couple of minutes and recheck doneness.
