Ingredients

  • 24 ounces (about 1.5 pounds) yellow potatoes
  • 5 Tbsp unsalted butter (a little more than half a stick)
  • 2.5 ounces whole wheat (or all-purpose) flour
  • 10 ounces milk
  • 1 small onion, finely chopped
  • 4-5 cloves garlic, minced
  • 2 ounces shredded sharp cheddar cheese
  • 2 ounces shredded gruyere cheese
  • 1/4 tsp grated nutmeg
  • Salt and pepper, to taste
  • Garnish: Chopped chives

Preparation

  1. Peel and thinly slice potatoes to about 1/8- to 1/4-inch thick. Place in an oven-safe casserole dish. Preheat oven to 350 degrees.
  2. In a saucepan, melt butter over medium heat. Add onion and garlic and sauté until soft and aromatic. Add flour and stir to combine.
  3. Add milk and stir for about 3 minutes until thick. Add cheeses and nutmeg. Continue to stir until cheese is melted and mixture is smooth. Season with salt and pepper, to taste.
  4. Pour cheese sauce over sliced potatoes. Mix to incorporate sauce evenly. Cover casserole dish with aluminum foil and place in oven. Bake for 25 minutes until potatoes are cooked.

    Sprinkle with chopped chives (optional) and serve.
