For the Salad
- 2 pounds yellow potatoes
- 1/4 cup chopped dill
- 1/4 cup chopped parsley
- 3/4 cup chopped cherry tomatoes
- 1/2 cup chopped marinated artichoke hearts (save the juice!)
- 1 bell pepper, thinly sliced
- 1/2 cup thinly sliced red onion
- 3/4 cup feta cheese
For the Lemon Vinaigrette
- 1/4 cup lemon juice
- 1/2 cup red wine vinegar
- 1/4 cup olive oil
- 1/4 cup liquid from the marinated artichokes
- 1 tsp garlic powder
- 1/2 tsp salt

Instructions
- Cook potatoes in a large pot of water on medium-high heat. Once the water boils, cook until potatoes are soft, about 15 minutes. Drain the water and let potatoes cool.
- Cut potatoes into bite-sized pieces and toss with dill, parsley, tomatoes, artichokes, bell pepper, red onion and feta.
- In a mason jar, mix together the ingredients for the vinaigrette. Toss the lemon vinaigrette dressing with the potatoes and veggies.
