Ingredients

For the Salad

  • 2 pounds yellow potatoes
  • 1/4 cup chopped dill
  • 1/4 cup chopped parsley
  • 3/4 cup chopped cherry tomatoes
  • 1/2 cup chopped marinated artichoke hearts (save the juice!)
  • 1 bell pepper, thinly sliced
  • 1/2 cup thinly sliced red onion
  • 3/4 cup feta cheese

For the Lemon Vinaigrette

  • 1/4 cup lemon juice
  • 1/2 cup red wine vinegar
  • 1/4 cup olive oil
  • 1/4 cup liquid from the marinated artichokes
  • 1 tsp garlic powder
  • 1/2 tsp salt

Preparation

Instructions

  1. Cook potatoes in a large pot of water on medium-high heat. Once the water boils, cook until potatoes are soft, about 15 minutes. Drain the water and let potatoes cool.
  2. Cut potatoes into bite-sized pieces and toss with dill, parsley, tomatoes, artichokes, bell pepper, red onion and feta.
  3. In a mason jar, mix together the ingredients for the vinaigrette. Toss the lemon vinaigrette dressing with the potatoes and veggies.
